Large grey prawns in the shell, their translucent blue-grey bodies stippled with fine dark speckles and their long antennae sweeping past the plate. Pale coral legs and tail fans give away their freshness.
These are the sweet, firm prawns that Chinese kitchens call ji wei xia — plump enough to carry a whole dish, delicate enough to eat simply boiled with a dip of soy and ginger. The shells are thin and come away easily, and they are excellent on the barbecue.
